In September 2024, Billy and Emma Trigg brought their food and events experience to Talgarth Mill, opening the café that became Trigg's at the Mill.

Billy's experience included award-winning restaurants such as Bristol's Poco and The Ethicurean, known for its sustainable approach. Billy and Emma founded Trigg Food in 2016 after returning to Hay-on-Wye and built a following through events, festivals and pop-ups.

At Talgarth Mill, they developed that work around seasonal ingredients, local suppliers and accessible, carefully made food. Emma's events background also helped the café grow beyond daytime service, with pop-up dining, music and other gatherings forming part of its story.
