Chapters is starting the new year with something rather special. After more than a decade of hoping to collaborate, Chapters will finally welcome Liz Knight of Forage Fine Foods for a hands-on wild food workshop on Sunday 1 February — a chance to learn how the flavours growing all around us can transform the way we cook.
Liz has spent the past 15 years teaching people to see their gardens, hedgerows and everyday green spaces in a completely new light. Her courses are renowned for being practical, accessible and full of surprising discoveries. This new half-day session at Chapters brings that expertise directly to Hay on Wye.
Across a focused three-hour session, Liz will introduce the top wild harvests to look out for throughout the coming year. It is designed to help beginners and enthusiastic cooks build confidence in identifying and using edible plants as they come into season.
Participants will come away with practical knowledge, a clearer understanding of the seasons, and plenty of inspiration to start incorporating wild ingredients into everyday cooking.
Chapters describes the collaboration as long-awaited and deeply exciting — a meeting of two approaches that share a love of flavour, seasonality and thoughtful food.
